Chocolate & Cherries Cheesecake

Our Chocolate and Cherries Cheesecake is served with a generous portion of cherry filling to ensure even the biggest cherry lovers are satisfied, but if you want to add a homemade touch, check-out this great recipe for a sweet and tart cherry sauce that's sure to delight!

Ingredients:
- 300g (10.5 oz) fresh cherries, halved and pitted
- 2 tablespoons water
- 2 tablespoons lemon juice
- 2 tablespoons sugar
- 1.5 teaspoons cornstarch
- 3 teaspoons water (extra)

Directions
1). In a medium saucepan, combine the cherries, water, lemon juice and sugar. Bring to a boil over medium heat, then turn the heat down to simmer.
2). Simmer for about 10 minutes, stirring often, until the cherries have softened and the liquid has tripled
3). Make a slurry (thickening agent) by thoroughly mixing the cornflour and extra water. Slowly dribble the slurry into the cherries while stirring constantly so that it doesn’t turn lumpy.
4). Remove from heat and allow to cool completely.
5). Once cooled, spoon your cherry sauce over your Chocolate & Cherries Cheesecake
